Spicy Pumpkin Hummus + DIY Tomato Bread

reading time: 2 min

Usually I don't eat bread - like, ever - but this spicy hummus spread made me eat several slices of bread. This tells you a lot about the tastiness of this humus (or about my inconsistency).

Since i've had a huge organic Hokkaido pumpkin (my favourite) lying around in my room ever since my birthday in September, i decided to make several recipes with this big baby!

Pumpkin Pie Ice Cream
Pumpkin Ketchup
Pumpkin Hummus

The latter one is probably my favourite, though it's hard to tell because each of the 3 dishes have their very unique taste. I've made a bunch of hummus variations so far (classic hummus, curry hummus, carrot hummus), but this one has a nice sweet twist and makes a perfect healthy, satisfying snack.

We also made some Mediterranean Oven Baked Tomato Bread - you can find the recipe below!

Buckwheat Pancakes (Blinis) with Ginger Apple Chutney

reading time: 1 min

Hello Beautiful,

it's #pancakesunday again! How are you today? I'm feeling great because after a snug movie night with friends and a nice sleep in my boy and I started the day with this delicious stack of buckwheat pancakes. Buckwheat pancakes (blinis) are actually part of traditional Russian cuisine,  but my version is vegan, gluten free and with no refined sugar!

I mean, how can you step a Sunday wrong when you start with a thick pancake stack like this?

February Essentials /16

reading time: 2 min

Hello friends -

I'm still very much in love with granola bowls for breakfast, but lately i've been working on my term paper (on female characters in video games), and to fuel myself i've been relying on my good ol' oatmeal in various forms.

I'm also very much in love with my new LBDs (little black dresses), vegan cake and hot chocolate! Read on, if you're hooked now :)

Strawberry Muesli Parfait (vegan)

reading time: 1 min

To be honest, I don't really care about Valentine's Day, and I'm okay with that. I don't mind the celebration of February 14th, but to me it's just that: Feb 14th, a day like any other day.

Why would I need an official date to prove my affection to my loved one if I could just do that any other day? My impression is that instead of showing an honest, intuitive gesture of love, most people feel under pressure when V Day (almost like D Day) is coming up - either because they're in a relationship and are struggling to please the expectations of their partner - or they're single and get their nose rubbed in all the pink, glittery, glamorous Valentine's vibes.

Well, nevertheless, I always enjoy the opportunity to pour my heart and soul into a lovely dish, especially when i'm cooking for somebody else, so suitable for today's love cooing I want to share with you my quick, Valentine's-y (but not as cheesy) dessert to share with your loved one.

DIY Pumpkin Ketchup + Scrambled Tofu

reading time: 2 min

Yes, i'm vegan, but i don't really like tofu all that much. In fact, the only soy product i do use on a regular basis, is soy milk.

However, when i was scrolling through Jo's instagram feed, which by the way has become one of my top favourites (I somehow discovered him in the depths of Instagram and grew to love him - perhaps because he's a guy and he's vegan and I think that's great - very superficial I know - or just because of his gorgeous vegan food pictures!)

Anyway, i was scrolling through his feed and stumbled upon a post on scrambled tofu, and i thought that my pumpkin ketchup went perfectly with it :)

Both recipes are listed below!

Chocolate Kidney Bean Brownies

reading time: 1 min

Believe it or not, but this dessert is much healthier than what most people have as a main meal! It is based on kidney beans and cornmeal, sweetened with nothing but fruit and xylitol (read about the incredible - dental! - health benefits of xylitol here or here).

But if you didn't know, you wouldn't even notice.

Chocolate Chickpea Brownies (vegan & gluten-free)

reading time: 1 min

Chickpea Brownies? Like, hummus but baked and with chocolate?

Well, sort of.

But you don't taste the chickpeas! These brownies are just really nice and filling and not too sweet, but sweet enough to satisfy your chocolate cravings. This recipe was adapted from my Kidney Bean Brownies, totally improvised, but a total success

Maisy ❤ January 2016

reading time: 3 min

Is it already February?
Seriously, where did the first month of this brand new year go? Is that what growing up means? Losing time - or rather, being consumed by time?

Today, I want to share with you the things that have been on my mind over the past few weeks (except for university and food, obviously, haha!).
